GWT giving me 404 errors based on old and deleted site map

I'm getting a bunch of 404 crawl errors in my Google Webmaster Tools because we just moved our site to a new platform with new URL structure. We 301 redirected all the relevant pages. We submitted a new site map and then deleted all the site maps to the old website url structure.
However, google keeps crawling the OLD urls and reporting back the 404 errors. It says that the website is linking to these 404 pages via an old outdated sitemap (which if you goto shows a 404 as well, so it's not as if Google is reading these old site maps now). Instead it's as if Google has cached the old sitemap but continues to use it to crawl these non-existent pages.
Any thoughts?

How long has it been since you deleted the old sitemap and provide the new one ?
I think your Google account may just need some extra time to update correctly. it seems to me that Google updates in my WMT account seems to have a little lag time. I think it will update correctly after a few weeks to a month. I don't think you have any actual problem as much as Google is not actually finding and updating new info correctly.
I would wait and see what happens after a short while.

As long as it's 301'ing the important ones then that's ok. The 404's will regularly pop up in this scenario as long as it crawls something that it encounters a page with the link or from the index and follows it to a 404. Just mark them as fixed.

Confused about repeated occurences of URL/essayorg/topic/ showing up as 404 errors in our site logs
Working on a Wordpress website, https://thedoctorwithin.comScanning the site’s 404 errors, I’m seeing a lot of searches for URL/essayorg/topic, coming from Bingbot, as well as other spiders (Google, OpensiteExlorer). We get at least 200 of these irrelevant requests per week. Seems like each topic that follows /essayorg/ is unique. Some include typos: /dissitation/Haven't done a verification to make sure the spiders are who they say they are, yet.Almost seems like there are many links ‘in the wild’ intended for Essay.Org that are being directed towards the site I’m working on.I've considered redirecting any requests for URL/essayorg/ to our sitemap… figuring that might encourage further spidering of actual site content. Why is this site ranking higher?
We've put a fair bit of effort into delivering value here: https://lewescountycars.co.uk/ But a search for "Lewes taxis" or "taxis Lewes" puts this site above us: https://www.lewestowntaxis.co.uk/ As you can you see, this is a tiny site that we outperform in most ways.... what can we do to rank above it that we haven't already done? GWT - International Targeting
By selecting a country in the Country Targeting section of GWT what effect does this have? For example if I select UK will this boost rankings on google.co.uk and decrease them on google.com etc? If we are based in the UK but our customer base is worldwide should we not select anything?

Why would this site outrank a Pr2 site with higher domain authority?
I am trying to get a pr2 site to be on top 7 local spot for the keyword Van Nuys Bail bonds but have discovered a site which has barely any back links and is not even a year old on top results. Their backlinks are from lower authority domains than what we have. How could this site be beating a 7 year old pr2 website? The site I'm working on is http://bbbail.com/ The site that is ranking in 5th spot local with pr0 is http://www.vipbailbonds.org/ is it maybe because it is a .org site? Also I notice that all websites in top spots have www, could that be a factor as well?

Are 404 Errors a bad thing?
Good Morning... I am trying to clean up my e-commerce site and i created a lot of new categories for my parts... I've made the old category pages (which have had their content removed) "hidden" to anyone who visits the site and starts browsing. The only way you could get to those "hidden" pages is either by knowing the URLS that I used to use or if for some reason one of them is spidering in Google. Since I'm trying to clean up the site and get rid of any duplicate content issues, would i be better served by adding those "hidden" pages that don't have much or any content to the Robots.txt file or should i just De-activate them so now even if you type the old URL you will get a 404 page... In this case, are 404 pages bad? You're typically not going to find those pages in the SERPS so the only way you'd land on these 404 pages is to know the old url i was using that has been disabled. Please let me know if you guys think i should be 404'ing them or adding them to Robots.txt Thanks

Moving Old Site to New
Dear SEO Gurus, I have been working on #2 site for a couple of months and I think it is a good idea to redirect #1 (old site) to #2 (new site) below, yes? What is the most effective way of doing this?
