Create a new XML Sitemap for a blog subdomain?

What would be the best way to go about this?
A site just put a blog on http://blog.domain.com/
Should there be a separate XML Sitemap for that particular subdomain or should the original XML Sitemap for the main domain be sufficient?

It will be better to add and verify blog.domain.com in your GWT, and add a separate sitemap inside this account.

Linking websites to shop: courses.example.com, software.example.com,... Do I have to check which keywords these linking websites are already ranking for and choose other keywords for my category and product pages on the webshop? The problem with this could be that the main keywords for the category pages on the webshop are mainly the same as for the other subdomains. In search console now still 80% of our sitemaps appear as "pending" and among those sitemaps that were processed only less than 1% of submitted pages appear as indexed? Is this normal ?
How long does it take for google to index pages from sitemap?
Before https migration nearly all our pages were indexed and I see in the crawler stats that google has crawled a number of pages each day after migration that corresponds to number of submitted pages in sitemap. Sitemap and crawler stats show no errors.0 -

Should I include URLs that are 301'd or only include 200 status URLs in my sitemap.xml?
I'm not sure if I should be including old URLs (content) that are being redirected (301) to new URLs (content) in my sitemap.xml. Does anyone know if it is best to include or leave out 301ed URLs in a xml sitemap?

Urls missing from product_cat sitemap
I'm using Yoast SEO plugin to generate XML sitemaps on my e-commerce site (woocommerce). I recently changed the category structure and now only 25 of about 75 product categories are included. Is there a way to manually include urls or what is the best way to have them all indexed in the sitemap?
