Does anyone know which fields and code are necessary to embed a testimonial into a page using schema.org?

What exactly are you trying to achieve? No rich snippet markup from schema.org is required to embed a testimonial into a page. If you are intending to provide additional information to a search engine which helps gather a better understanding of what your website is and does so they can display markup in the search results, then this would be where you would use the appropriate markup.
You may want to research the rich snippet markup for reviews to see if this is appropriate for what you're trying to achieve. It may be useful to read my other response to a schema related question I wrote a few moments ago too.

If it's a testimonial of an company I believe you use the Reviews fields with Organization as the Thing.
So if you take the example page on Schema.org (below) and swap out the Product for an organisation you should have it.

I am working on a schema markup project. When I test the schema code in the Schema Markup Validator, everything looks fine, no errors detected. However, when I test it in the Rich Results Test, a few errors come back.

Exact match .org Ecommerce: Reason why internal page is ranking over home page
Hello, We have a new store where an internal category page (our biggest category) is moving up ahead of the home page. What could be the reason for this? It's an exact match .org. Over-optimization? Something else? It happened both when I didn't optimize the home page title tag and when I did for the main keyword, i.e. mainkeyword | mainkeyword.org, or just mainkeyword.org Home Page. Both didn't help with this. We have very few backlinks. Thanks

Schema for Product Categories
We have an E commerce site and we have started to implement Schema's. I've looked around quite a bit but could not find any schema's for product categories. Would there be any schema's to add besides an image, description, & occasional PDF?

Schema.org snippet for thumbs up-down reviews
Hi guys, I'm deep into the Schema.org meta-tags implementation for the reviews on my website and I'd love to know how do you think I should implement it when I have Positive-Negative reviews as opposed to star ratings. I couldn't find a site that had this with schema tags for reference. Fiverr used to have thumbs up/down, but recently changed to star rating. On our services marketplace we allow users to review the providers they worked with and ask them for a positive-negative review - thumbs up/down with an additional open text area. I thought about adding a schema.org meta-tags like this: Lets assume one of our providers got two reviews, one is positive and the second is negative. Schema.org for LocalBusiness v. Webpage
I am adding schema.org markup for some clients and I am running into an issue. Specifically the site I am working on uses a child theme for Genesis 2.0. Genesis 2.0 added schema.org markup by default to all pages. If I want to change the markup on the home page to a LocalBusiness should I remove ALL other schema.org markup on there for the website (marking nav as nav , header as header, etc)? Or can I leave the markup as a webpage and just add the local business markup as well? When I look at it in the testing tool in GWMT, it just shows the webpage markup not the LocalBusiness markup.
