How Can I Make My Site iPhone Friendly?

I have been looking into making my website for iphone friendly as my analytics are not great for the iphone and I know when I try to navigate around it on an iphone it can be tough.
I was told that if I make changes to the layout that it would affect my layout across everything, which I did not want to do. So I have two questions:

Is this correct regarding the layout?

If so, if you did something like m.waikoloavacationrentals.com which would be the mobile version how would that possibly effect your rankings with regards to the traffic distribution?
Any feedback would be appreciated. Also if anyone has any experience in doing this I would be interested in discussing further.

Hi Rob,
Great question and I am glad you are looking into how your site responds to mobile users. It sounds like you are having some issues with smartphone users.
To be clear, it's best if you approach this problem from a screen size rather than a specific phone type. Your website works fine on tablets, but it's smart phones you have a problem with. You can do a responsive design that changes based on the user screen size rather than phone type which can get really hard to develop for really quickly.
Here is a guide we have developed for all things mobile design and SEO. We highly recommend making your site responsive (no need for m.domain.com or domain.com/mobile), which will take care of any issues with linking in the future, shares, and all other forms of user confusion as well as search engine confusion.
Also here are mobile recommendations straight from Google.

Thanks! For some reason I just got this. I think it is more just a lot of the buttons are smaller and I really just need a "new look" for mobile. My current site seems to be great for an ipad or desktop, but just the design is not good for a iphone.

Hi Rob. I'm guessing your site is not responsive?
So is the navigation issue related to what is clicked to go from page to page? If the buttons are just too tiny, you may be able to enlarge them using CSS for handheld devices like the iphone. If it is because of dropdowns that require a mouse click to operate correctly, then you may have to replace them with different type of dropdowns.
Or if a site rework is planned, then going responsive fixes these "small device" issues. I use Twitter Bootstrap for responsive and love it.

Mobile Friendly Issue
2 days ago I saw my site listed with the 'mobile friendly' text in the Mobile searches. Today it has vanished. I have checked my site using the Google tool and it shows my site as Mobile Friendly. Has anyone had a similar experience?

Can someone help me understand Structured Data?
So I'm wondering if someone could explain Structured Data a little better to me and what the importance is. I also am wondering how to best add Scheme.org markup to certain pages. I tried a plugin for wordpress and I don't think it was working correctly. I'm specifically wanting to make sure my Google Profile is showing with my website in SERP. I have the ?rel=author tag in on the front page and when I checked it when the Google Structured Data checker it shows it to be correct but its not displaying in SERP. Thanks!

Can white text over images hurt your SEO?
Hi everyone, I run a travel website that has about 30 pre-search city landing pages. In a redesign last year we added large "hero" images to the top of the page, and put our h1 headlines on top of them in white. The result is attractive, but I'm wondering if Google could be reading this page as "white text on white page", which is an obvious no-no, especially if it could seem that we're trying to hide text. Here's an example: http://www.eurocheapo.com/paris/ H1: Expert reviews of cheap hotels in Paris I should add that our SERPs for these city pages has dropped (for "Cheap hotels in X"), but it could obviously be related to other issues. How does a Responsive Site kill SEO?
How does a Responsive Site poentially kill SEO? I've seen a few feeds on twitter how a website took a rankings dive after implementing a Responsive theme; yet, it's not clear to me what is actually going on within a Responsive site that would cause the SEO rank to tank? I can only speculate that it introduces a bunch of 404 errors, or that it changes all of the URLs into gibberish, so you loose all of the links coming into your website if not 301'ed? Can someone clarify, what are the actual mechanical issues on a Responsive website that becomes a concern to SEO? Thanks.

Site Ranks on Page 1 - Would launching new site hurt that
Hello, I currently have a website ranking in the top 7 for my main keyword. The website was built in 2004 and is definitely outdated, yet still ranks very high and brings in business. If i launched a new site on this domain, what would happen to my rankings? Would they drop? would they rise? Page Title or Search Friendly Urls?
We are currently auditing our website as part of our SEO strategy. One item which hascome up is the importance of search friendly urls against the search engine friendly page titles.
