To Reduce (pages)... or not to Reduce?

Our site has a large Business Directory with millions of pages. For examples' sake, let's say it's a directory of Restaurants.
Each Restaurant has 4 pages on the site, each tied together through a row of tabs across the top of the page:
Tab 1 - Basic super 7 info - name, location, contact info
Tab 2 - Restaurant menu
Tab 3 - Restaurant reviews
Tab 4 - Photos of food
The Tab 1 page generates 95% of our traffic, and 90% of conversions.
The conversion rate on Tab 2 - Tab 4 pages is 6 - 10x greater than Tab 1 conversions.
Total Conversions from search queries on menus, reviews and food are 20% higher than are conversions resulting from searches on restaurant name & info alone.
We're working with a consultant on a redesign, who wants to consolidate the 4 pages into one.
Their advice is to focus on making a better page, featuring all of the content, sacrifice a little organic traffic but make up any losses by improving conversion.
My counterpoint is that we shouldn't scrap the Tab 2-4 pages just because they have lower traffic - we should make the pages BETTER. The content we display is thin, and we have plenty of data we could expose to make the pages more robust. By consolidating it will also be hard to optimize a page for people searching for name/location AND menu AND reviews AND photos. We're asking that one page to do too much, and it's likely we will see diminished search volume for queries on menu, reviews and food. I think the decline will be much more significant than the consultant estimates.
The consultant says there will be little change to organic traffic. since Tab 1 already generates 95% of traffic. Through basic math, they're saying the risk is a 5% decline in organic traffic. Further, they see little chance of queries for menu, reviews, and food declining because most of those queries tend to send people too the home page or Tab 1 page anyway.
Finally, the designer of the new wireframes admitted that potential organic traffic risks were not taken into consideration when they recommended consolidating the pages.

It certainly seems like you've put much more effort into challenging any lazy assumptions (like a single page will inherently convert better) and I think your logic is sound. From what you describe it sounds like the listing UX is well-segmented according to the distinct types of search intent you know that you field from your visitors, and I'd be wary of trying to "fix" that if the navigability ain't broke. Especially if the single-page amalgamation puts any of your strong search intent content in a non-intuitive spot or, god-forbid, below the fold.

I am with you, if you can make the pages unique keep them. Dont go backwards when you can go forwards. You have established that the other pages convert better, it may be that they convert to sales better too. I have found long tails search queries, convert better to clicks and sales and are the cream of visits. If they convert to sales better by 10x, then that 5% is making 33% of your sales.
Make sure you demand what you think is best as many so called developers these days will do what easy for them. i have no idea what your circumstances are but many today make sites from ready made CMS solutions or templates, and expect you to fit to their limitations.
Listen to others, but in the end, no one loves your busibness or understands it like yourself

URL Structure on Category Pages
Hi, Currently, we having the following URL Structure o our product pages: All Products Pages: www.viatrading.com/wholesale/283/All_Products.html Category Page: www.viatrading.com/wholesale/4/Clothing.html Product Page: www.viatrading.com/wholesale/product/LOAD-HE-WOM/Assorted-High-End-Women-Clothing-Lots.html?cid=4 Since we are going to use another frontend system, we are thinking about re-working on this URL Structure, using something like this: All Products Pages: www.viatrading.com/wholesale-products/ Category Page: www.viatrading.com/wholesale-products/category/ Product Page: www.viatrading.com/wholesale-products/category/product-title/ I understand this is better for SEO and user experience. However, we already have good traffic on the current URL Structure. Should we use same left-side filters on Category Pages as in All Products Page? Since we are using Faceted Navigation, when users filter the Category (e.g. Clothing) they will see same page as Clothing Category Page. Is that an issue for Duplicate Content? Since we are a wholesale company - I understand is using "/wholesale/products/" in URL for all product pages a good idea? If so, should we avoid word "wholesale" in product-title to avoid repeated word in URL? For us, SKU in URL helps the company employees and maybe some clients identify the link. However, what do you think of using the SEO-friendly product-title, and 301 redirect it to www.viatrading.com/BRTA-LN-DISHRACKS/, so 1st link is only used by company members and Canonicalized 2nd is the only one seen by general public? Product page optimalisation
Throughout the years our website kept on growing this has led to product pages that have so much sub-pages that nobody is able to really get a good idea of the product. We are working on a new website where the visitor is central. Together with a usability partner we have down sized the preferred data to fit on one page with a tabular system with a maximum of 4 taps. My question will this affect our find ability if we go from 10 to 15 sub-pages to one main page

Page Shaping - No Follow Links
It's my understanding that adding a nofollow tag to pages that aren't of significance to users can help with page shaping and directing google to the most important links on my home page. I have 4 links on my home page that I'm considering adding a nofollow tag to: Privacy Policy, Legal Policy, Anti-Trust Policy, and Help-Desk Because these links are in the footer on every page I think they're probably sucking up some useful link juice. It's doubtful that anyone would actually search for our privacy policy or legal policy to find our site. I'd rather the juice to spread to other pages of use. What do you guys recommend?

Too many on page links
Our home page (and 1400 of our other pages) have well over 100 links, going beyond the recommend amount. Our competitors have less on page links (to other pages on their site) and way more link popularity so we are trying to figure out the best solution for this without hurting our sites conversions and usbaility.

Can I have a strong brand category page and a strong product page?
It seems Google base and other Comparison Shopping Engines like to see the brand in the product name. But, on my category page for that brand, website optimizer tells me including the brand name with each product is cannabilizes links. For example; I have a page for jewelerABC with 20 pieces of jewelry listed as well as original content about jewelerABC. I do not currently name these products as xyz by jewelerABC. This page comes up nicely in the serps. But in Google base The top listings for jewelry by jewelerABC seem to have every product named xyz by jewelerABC or JewelerABC xyzs. What is the best way to optimize.for both? Stephen
