How to get a mobile thumbnail image next to the search result?

Hey! I noticed the last few months that a lot of google searches now show an image next to your result when on mobile. i managed to get my listing to show an image before but I made some changes to the image and site and can’t seem to get Google to ahow the new image (or any image). I’ve added the image to schema mark up and still no luck.
Wouod ahyone have any advice on how to get the image picked up, or st least help increase the odds? The site is https://tourstoniagarafalls.com and you can see it on search (for me it shows on the bottom of page 1) for the keyword “Niagara Falls tours“.

Infinite Scrolling in On-Page Search Results
We have a website being built that will effectively function like an e-commerce site. When customers search within the site, we will display the results (sometimes hundreds). We were thinking of implementing infinite scrolling, but with so many results which all function as links to product pages, would this look funny i.e. having too many onpage links? Would the links at the bottom pretty much just be ignored (which is fine) or would they bring disrepute to the results further toward the top of the page? Thanks!

Using Transcription Service For Videos - Have Question Around Search and Spiders
Hi All, So I have put together a weekly video series on security topics. I have read an SEOmoz post around how you can boost SEO by adding the transcription to the page, which makes perfectly good sense. My question is, can I include the first couple of paragraphs and then have a "read the full transcription" so when the user clicks, the rest of the content appears? Do the search engine spiders only crawl the first two paragraphs in this instance or do they crawl the whole thing even though the entire content is not on the page? I dont mind making the page longer and including the entire transcription if it is easier for SEO but if there is no difference, than I think the first option would be the best user experience. Thoughts on Results from Changing Title Tags
A number of the client's we represent have seen drops in rankings. The title tags on these sites are formatted old way of doing tilte: "Blue Widgets| Cheap Widgets | Metal Widgets". We are going to change them to the natural format: Acme Offers Blue, Metal Widgets for Any Budget." Just wondering if anyone has made similar changes post-penguin and if they've seen improved ranking from doing it.

Should I include a "|" for better page title SEO results?
I have seen many sites that include the "|" in page titles and was wondering if there is some SEO value in the practice. Example: Product Name | Company Name Instead of: Product Name by Company Name I have not seen any value in it myself other than a good way to avoid stop words. I wanted to make sure. Currently I have the "by" included in the page titles.
