Restaurant menu SEO: PDF or HTML?

Is it better to use a PDF or hard code restaurant menus (or any document for that matter) in HTML? I want the content to be indexed and thought PDF was the way to go for several reasons, but I wanted to get confirmation on this before I move forward.

For SEO I would recommend HTML, with the option to download a PDF. That being said you should also consider how much time is wasted on doing it HTML. Can the company earn more money by spending their time on something else? I mean how often do people actually search for a certain dish when they are about to go out for dinner. My bet is that they are more likely to do a search like: "Italian restaurant in downtown Berlin" rather then "Broccoli slightly roasted in white-wine". Do you see what I mean?

Sitemap Size effect SEO
So I've noticed that the sitemap I use has a capacity of 4500 URLs, but my website is much larger. Is it worth paying for a commercial sitemap that encompasses my entire site? I also notice that of the 4500 URLs which have been submitted, only 104 are indexed. Is this normal, if not, why is the index rate so low?

SEO traffic to the homepage is down across sites
Week over week, I've noticed that organic traffic (and oftentimes revenue) for the homepage are down across most of our sites compared to last year. Brand search interest is down for a number of the brands, but in a lot of these cases, it's not down so much that it would make sense for how much the homepage is down (for example: brand search interest was down 4% last week compared to last year, but the homepage traffic was down 32% in visits). What I've done is generate entry page reports (this year vs. last year) and then bucket the pages by homepage, category pages, and product pages. In most cases, category pages are up year over year for traffic and revenue. I'm concerned that the homepage being down is more than a brand heat issue, but I haven't come across anything out of the ordinary in Google Search Console and keywords are pretty consistent in performance for the most part. Branded keywords continue to rank at #1, too. Any thoughts as to what else I can look into?

For years now whenever we recreate a site we always set up both an xml sitemap and an html sitemap page. Stupid question maybe - but what is the value to having an html sitemap on site?

Videos for SEO & Profits
Hello, I'm in the middle of developing a website that will be a tutorial site for SEO, http://universityofseo.com. My plan is to do video tutorials & blog posts to help entry-level SEOs and SMB Owners to help them become familiarized with SEO through quick and easy to watch videos. I eventually want to turn this into a revenue stream through advertisements. I want to know for both SEO and profit reasons, if I should host the videos on youtube and then embed them on my site, or do something like Bits on the Run / Whistia and put ads in the videos that way? I'm not overly obsessed with monetizing the site, but it would be nice to do it, but first and foremost i'm concerned with optimizing the site, having great and actionable content, then monetizing it. I'd appreciate any help on this matter, Zach

Limit number of links in a page, how to build the menu?
Hi, One of the first SEOMoz tool recommand to me, is to avoid multiple links on the same page. This is fully true, i've more than 600 internal links placed in a menu on the header.

What would you suggest me ? => No-follow on the links would be useful and not penalizing (if i still have other do-follow links to these pages) => Javascript menu, so that i can't be crawled by google => Any other suggestion? SEO LINKS
New to S.E.O. so excuse my naivety. I have made lots of new links some of them paid for e.g. Best of the Web but I don’t see any change in the latest competitive link analysis. Some of the links we have been accepted for just do not show. Also the keywords we are trying to promote the most have disappeared off the radar for over 2 weeks now.
