Move to a new domain - How to get the redirects right?

Hi,
I hope that someone with good htaccess knowledge can help.
I am planning on moving my site to a new domain. I understand that I should make 301 redirects using htaccess for every URL. This is a big site so it will be impossible to not forget some of the thousands existing URLs.
Now to the question: How do I make all the URLs that is not specified in htaccess to redirect to my new root?

Oops, I forgot to update this question after I came to a conclusion. Thanks for answering!
The redirects I ended up with looks like this:
RewriteEngine on
RewriteRule ^old-product.html$ http://www.new-domain.com/new-product.html [R=301]
RewriteRule ^old-category$ http://www.new-domain.se/new-category [R=301]I tried first to write them the way you suggest but it didn't work the way I wanted it do for category pages (or folders).
And I generated an .xml sitemap for the old site first that I used as a list of all URLs to redirect to so I think I covered them all.

You don't actually want to do what you're asking - that would mean that no page on your site would 404 (if any missing page redirected to the root).
Better:
Redirect individual pages using:
RedirectPermanent oldpage.html newpage.html
Redirect sections using RedirectMatch or RewriteRule. Then set up a way of tracking 404 errors - either by checking your log files or by doing something like this to track them in google analytics:
http://analytics.blogspot.com/2006/09/tip-tracking-404-pages.html
Then, when you have a list of pages you missed or forgot, you can add redirections for those pages as well.

Client rebranded with a new website but can't migrate now defunct franchise website to new website.
Hi everyone, My client is a chain of franchised restaurants with a local domain website named after the franchise. The franchise exited the market while the client stayed and built its own brand with a separate website. Hey Guys, Looking at Page Authority for my Site and ranking them in Decending Order, I see these 3 http://www.domain.com/ | Authority 62 http://domain.com | Authority 52 http://domain.com/ | Authority 52 Since the first one listed has the highest Authority, should I be using a 301 redirects on the lower ranking variations (which I understand how works) or should I be using rel="canonical" (which I don't really understand how it works) Also, if this is a problem that I should address, should we see a significant boost if fixed? Thanks ahead of time for anyone who can help a lost sailor who doesn't know how to sail and probably shouldn't have left shore in the first place. Cheers ZP!

301 process, migration to new domain
Hi all! We have an old site wordpress based, with great ranking and PR 7, called www.europe-internship.com which is going to be migrated into our new Django site www.eurasmus.com (specifically eurasmus.com/en/europe-internships)

The new one is a much more advanced version that we will keep developing. We have been migrating the information already but we are planning to apply the 301s in the next weeks to start passing the SEO value to our new site and traffic. We have all the url structures and everything checked and technically we are ready for it.
Therefore, we are almost ready. I have 2 questions: The new site includes more services, like accommodation, information...not only internships. Therefore, should we point the most relevant urls from our previous site to our home to share the value or just to the internships section? I am afraid that if the bounce rate goes higher from the 301 we could loose some value... 2)Should we point all the urls at the same time to the new site? Home, vacancies, blog pages, etc... or start gradually doing it to see how it goes till we make it to all the pages including the home? The old site still makes some money and I am not sure how quick will be to pass the SEO value, so in the way we may loose few thousand euros...We understand that, but we want to check what would be the best in your opinion. Unique domains vs. single domain for UGC sites?
Working on a client project - a UGC community that has a DTC model as well as a white label model. Is it categorically better to have them all under the same domain? Trying to figure which is better: XXX,XXX pages on one site vs. A smaller XXX,XXX pages on one site and XX,XXX pages on 10-20 other sites all pointing to the primary site. The thinking on the second was that those domains would likely achieve high DA as well as the primary, and would passing their value to the primary. Thoughts? Any other considerations we should be thinking about?

When migrating website platforms but keeping the domain name how best do we add the new site to google webmaster tools? Best redirect practices?
We are moving from BigCommerce to Shopify but maintaining our domain name and need to make sure that all links redirect to their corresponding links. We understand the nature of 301s and are fine with that, but when it comes to adding the site to google webmaster tools, not losing link juice and the change of address tool we are kind of lost.
