How should i best structure my internal links?

I am new to SEO and looking to employ a logical but effective internal link strategy.
Any easy ways to keep track of what page links to what page?
I am a little confused regarding anchor text in as much as how I should use this. e.g. for a category page "Towels", I was going to link this to another page we want to build PA for such as "Bath Sheets". What should I put in for anchor text? keep it simple and just put "Bath Sheets" or make it more direct like "Buy Bath Sheets".
Should I also vary anchor text if i have another 10 pages internally linking to this or keep it the same.
Any advise would be really helpful.

I think the best strategy for internal linking is to keep things simple and consider what would give the best user experience for your customers. So, for example, linking from towels to bath sheets is logical and helpful, as it's closely related.
The same applies to anchor text - let the customer know what's on the other end of the link, and don't try to slot in unnatural phrases and keywords for SEO benefit. It's likely that excessive internal anchor text linking triggers a penalty (http://www.seomoz.org/blog/testing-the-value-of-anchor-text-optimized-internal-links), so try to keep anchors natural and vary them if the context requires it. So you might use "bath sheets" on one page, "buy bath sheets" on another, "our range of bath sheets" on another and so on.
In terms of keeping track of links, a site map or a spreadsheet should easily accommodate the information you want to track.
You might also want to consider page rank sculpting, which uses internal links to channel the page rank towards high priority and high value pages. However a well-structured site channels page rank naturally and doesn't require any sculpting. Matt Cutts deals with the practice here: http://www.mattcutts.com/blog/pagerank-sculpting/

Link building strategy
Hello Moz Community, For the last couple of months we have been trying to improve our ranking in Google UK for the keyword "church candles" http://www.wattsandco.com/church-supplies/church-candles.html We’ve been contacting relevant interiors/lifestyle blogs to feature our candles including anchor text linking back to our page. Our anchor text has been predominately our brand (Watts & Co) but also other key search terms (Watts and Co church candles, Watts and Co pillar candles). We have been tracking our ranking for the keyword “Church candles” using the Moz “ Rank Tracker” and we started on position 15 in Google UK. We went up to 12 briefly before moving down every week to 15, 17, 19 and 22. We checked today and we have moved back up slightly to 19. Our progress seems to be a bit slow and inconsistent. We wanted to reach out for any advice on how we can move up? If there was any way we can improve our strategy? Brand 2 Shoes "Name of Model" Now, what I'm worried about is that if I do a search for "Brand 2 Shoes" it should bring up my landing page right? But it doesn't, it brings up some of the products instead... I'm worried that we may be self cannibalizing some of the keywords - and thinking of changing the product page to be "Brand Name of Model Shoes" or "Name of Model Shoes by Brand" Any ideas or comments appreciated! How do I get the best from our Blog and build quality links and drive traffic to our site?
We have recently setup a Wordpress focused blog (blog.towelsrus.co.uk) which is very much work in progress. Because of financial constraints we had to host this on a separate sub domain. I need to get to grips with blogs is new to me (only been doing SEO this for 3 months now) and have have read may posts on the forums here that this is one of the best ways to build links and engage the audience. How do I go about getting people to read my blog, and should I use this to pull in traffic on keywords we cannot through the main site or should i use this to re-enforce and build traction on those keywords we are trying to rank for on the main site?

New folder structure
We are in the process of relaunching one of our website's that will use a totally need folder structure. Previously we used mydomain.com/content/country/region/city/district/hotel_name/ Now we are changing to make the URL shorter, more precise - since we are using a new CMS, to be mydomain.com/gb_Hotel-Name/ My question is currently we've in the region of 10,000 pages indexed in Google. So we are going to have to create 301 permanent redirects from the old URLs to the new URLs. From your previous experience, is this the correct way of approaching the task.
