If Anchor Text is dead, how do I target certain keywords?

I get it, a truly authoritative source will not be able to control the exact anchor text that others link to it with. Google is trying to deliver the most authoritative source, so non-exact anchor text is more likely a good option for them.
This makes total sense and I have been varying the anchor text of my blog posts.
But this begs the question: How am I supposed to know I am increasing my rankings for the high volume key words in my industry, and not leaving it up to Google to decide which keywords are most important?

anchor text will never die as long as Google uses links as a major ranking factor in their algorithm. Think extremely varied long tail anchor texts.

Anchor text is not dead.
Updates such as Penguin may have penalized sites with excessive, unnatural amounts of spammy exact anchor text links, but as long as you don't overdo it, anchor text still matters a lot.
To optimize your site for specific keywords, make sure all your onsite optimization is taken care of: have you keywords in your title, URL, copy, etc. Then make sure your site is relevant to the keywords you are targeting, that will get people to naturally link to you with those keywords.

Has your site ever been targeted by malicious link building executed by a competitor?
I'm pretty sure one of my client's sites has been targeted by malicious black hat link building tactics employed by a competitor site. Over the last few weeks we've gotten 100s of super low quality spammy backlinks. No one has been doing link building, so the only thing I can think of is that competitor entered our URL into some spammy backlink building sites. Has anyone else experienced this? It's the real estate industry, so I wouldn't be surprised considering how competitive it is, but I'd love to hear your experiences.

Over optimization of Anchor Text | Consequences, Guidelines, Precautions
Hi everyone. I am really worried because of the constant penguin and panda algorithms. I hired two or three SEO agencies and they did some link building for my pages a while ago. And just this time, our rankings dropped almost sitewide some 7-8 positions. I checked our link profile in this site , and we do not seem to have spammy links. I admit that we do have some low link quality, such as directories, blog posts, etc. And it seems to have 10-15 links with overoptimized anchor text, such as keyword exact anchor text, etc. I have a couple of questions regarding this matter? - What entitles an overoptimized anchor text? I mean, i can´t control people linking to me out there, and many of them used the product or brand name. Added to the fact that my former agency used article marketing links with exact keyword. - If i "overoptimized" my anchor text, what is the best solution?, I could change some anchor text by asking some people. Should i disavow, delete? What is your best bet here? - What is (May 27 2013) best practice for anchor text or link referall. I know it will keep changing, but i want to engage in the right practice right now. should link with www.domain.com/keywordpage.html, or how would one look natural? -I saw some recent links that are really strange to me. Could the competition be sending me some bad links in order to augment the situation. Is that something normal?, it sounds strange to me. Thanks for your valuable advice. I know many people are frustrated with these penalties and hits. Because there are still many sites with Mass EMDs, 3-page content, flash sites, that are ranking better than a high quality and engaging one. Our anchor-text profile is natural, but looks spammy, what to do?
We are a site with about 12 directories, each one in a sub-folder and previously had their own URL which we merged together for increased branding efforts. When I was analyzing our anchor-text profile of our study abroad directory, it seems that the anchor-text profile is heavy on your key keywords, such as 'Study Abroad' and then some branded. When I say heavy, I am talking 88% are 'study abroad'; followed by 4% are branded, and 2% are branded the old URL that is 301'd to the new subfolder. We have never bought links nor have we really had a strong link building strategy. I am currently thinking of disavowing the links with low DA and are part of the heavily used (study abroad) keywords. Is this a good idea? What should we do to show that these are natural links?

Not getting ranks for long tail keywords
Hi I started white hat linkbuilding for this site - http://www.capsulekratom.com/ since 2-3 months, but I havent got any ranks for my keywords. Whereas I started few other new sites along with this on same niche and they are growing both in terms of traffic and ranks. Not sure, why I am not getting ranks for this website. When is it excessive anchor text usage?
Hrello fellow Mozzers. There's been alot of writing about excessive anchor text usage, and as an SEO I get it. Don't get to crazy about it, but - WHEN is it excessive anchor text usage? Is it excessive if I have 50 links distributed in 10 blogposts?
