Htaccess 301 regex question

I need some help with a regex for htaccess. I want to 301 redirect this:
to this:
changes:
- different protocol (http -> https)
- add 'www.'
- different domain (olddomain and newdomain are constants)
- different subdirectory (oldsubdir and newsubdir are constants)
- 'fruit' is a variable (which will contain only letters [a-zA-Z])
- is it possible to make 'fruit' UPPER case on the redirect (so 'fruit' -> 'FRUIT')
- remove '.aspx'
I think it's something like this (placed in the .htaccess file in the root directory of olddomain):
RedirectMatch 301 /oldsubdir/(.*).aspx https://www.newdomain.com/newsubdir/$1

I guess this was mostly a regex question. I think I figured it out:
RewriteEngine On
RewriteCond %{HTTP_HOST} ^olddomain.com$
RewriteRule ^oldsubdir/([a-zA-Z.]+).aspx$ https://www.newdomain.com/newsubdir/$1 [R=301]Thanks for the tips.

Thanks, Tom. But 'fruit' was a placeholder for a variable page name that can contain letters or a '.' (sorry if that wasn't clear). for example, 'fruit' could be "abc.def.aspx" and I'd like it to become "ABC.DEF" (strip off the .aspx and uppercase it). Need a regex. The '.' within 'fruit' may or may not be present. But the page will always have the suffix '.aspx' that I want to strip off.
I'd also like to do it with an .htaccess statement instead of VBScript. Running on unix.

301 Question - issue
A while back we had a 'bleed' on one of our sites, which basically meant one of our sites started to leak across pages to another and that site started to rank for the same pages and now we have hundreds of pages ranking for urls that do not exists. It's hard to explain, bare with me. If you were to click on the cached view in Google for the ranked page it would show you the main site, but if you were to click it as usual, then you would be taken to the site but a 404 would show as the intended page was not for that site. We believe we fixed the 'bleed' and have setup 301s for all the affected pages to go to the home page for the site it affected. But these pages have not been removed from Google, which we thought a 301 would do. So we still have hundreds of pages being ranked but are redirected to the home page. Why hasn't these pages been removed?

301 re-direct affect on SERPS
Hi Moz Community, please can I hit you with a scenario and get your thoughts? We have a client site - clientsite.com - with reasonable rankings for some of our client's target search terms/branded terms. We have built language specific subdomains - it.clientsite.com, de.clientsite.com - which have been manually translated into local languages. These subdomains have robots 'noindex' as we only want to drive traffic to clientsite.com. We've installed a geo location tool on clientsite.com that 301s visitors to the appropriate subdomain, so content is served in their local language. clientsite.com will be the 'catch all' for locations where sub domains have not yet been created. If Google crawls clientsite.com and is 301ed to a sub domain, will we lose SERPS? The sub domains will have the same content (99% the same content anyway) as clientsite.com, but in local languages. Unintentional wildcard 301 Redirect?
I have migrated a client's site to a new domain. I used Yoast tools to add 301 redirects for all active site pages from old domain to new domain in the .htacces files as neither the client nor I have access to hosting server via FTP (long story). Redirects are working as I intended, and we didn't lose too much in our rankings. Unfortunately, as soon as I saved the .htaccess file in Yoast, old-domain.net/wp-admin began redirecting to new-domain.net/wp-admin. I can no longer login to the wordpress site on the old domain. I did not enter a redirect for /wp-admin. Any thoughts on how this is happening or if there is some other way to get back in? Without server access, I'm pretty stumped. Thanks!

301 or Canonical - Ecommerce Site Question
We are making a change to our Navigation and this includes having to change the URL structure of a few pages of our site. Due to issues with the CMS (that are out of my control) we are unable to keep the current URL structure of two of our highest ranking pages. Our site is an E-commerce Site The Structure is changing from..... www.domain.com/page/highrankingpage <----OLD PAGE RANKED WELL to www.domain.com/category/highrankingpage <----NEW PAGE Generally I would have 301 'd this page but I found out that our Tech team added a Canonical to this page instead....(showing the high ranking page to the Search Engines) and on our site the visitors are able to browse the website getting the new page. 301 old site to new site?
I have client with an old site - www.bestfamilylawattorney.com - which had a lot of spammy links (and bad rankings). Instead of fixing those issues, we started a new URL - www.berenjifamilylaw.com - with new content and redesign. Should I do a 301 redirect from old to new domain? If the old site was being penalized, would a 301 transfer that penalty? I just want to make sure I don't end up hurting the new site after doing all the work to start fresh. Thanks.

Htaccess rewrite rule (very specific)

301 Redirection and apostrophes in URLs
Hi I am experiencing trouble getting any redirects with apostrophes in the URLs to 301 redirect in order to eliminate 404 errors. I have tried replacing the instance of the apostrophe in the source URL field to %27 and variations of this but to no avail. The site is a wordpress site (the old URLS are legacies from the old Business Catalyst site) and I am using the redirection plug in. I have gone into some detail with a helpful soul here http://wordpress.org/support/topic/how-to-deal-with-apostrophes-in-source-url but unfortunately to no result. If anyone has any idea how to solve this puzzle I would be grateful for the help.
