SOS - I have done a terrible mistake: How can I make it up?

Two weeks ago i changed the urls on our website, without redirecting the old ones. This has led to a dramatic drop in ranking.
What should i do:

redirect the old pages and keep the new ones
-
Change the urls back to the original ones
Which of these to methods will result in best ranking?

As Ray-PP & Silver Door have mentioned 301 is the best option here. You may well have to wait for Google to discover the new links but fear not, whilst you are waiting you can be pro-active getting in touch with webmasters who have the links on their pages and ask them to update the links. You can also submit some of your more important links to e.g. twitter to help them get indexed that bit quicker if you're in a really hurry but I wouldn't spam this and only use it for some of the more important areas.
As for the how to it really depends on your CMS system. As for which method, currently your in the same mess for which ever tactic you choose so find the URL structure you like and go for that.

No, generally a 301 redirect will transfer 99%+ of the authority to the new link. I would anticipate waiting about 2 weeks before noticing the new URLs rank as high as the old URLs.
If you change the URLs back to the old structure, those rankings should return more quickly. However, if you new structure is more user friendly, it may be a good idea to make the change now rather than later, when the URLs gain even more authority.

99 %... so I don't get punished more? How fast will I see the increase? How do I redirect pages?

We changed something in the cms.. instead of having the heading "solutions" we changed to "products" not thinking about the fact that all the sites linking from this page now would change their urls.
We could change back, because the change wasn't that important. But would we then get the same ranking on google like we had before the change two weeks ago?
If I should redirect - how do I do it? And how much do I get punished SEO-wise by changing?

Make sure to 301 the old URLs to the new URLs - this will pass along 99% of the authority and you should see an increase in the SERPs for your new URLs.

What was the reason for changing the URL in the first place?
This will determine if you redirect the old ones or revert back.

Can you transcribe your youtube video to just google?
YouTube videos have been very effective for us on our site. The only problem is they have taken part of a fair amount of our content so to google our pages may seem to have minimal content. Transcribing each video and including that on the page would take away from the look of the page and clutter it. Does having a \ on a URL make a difference?
On our website we have CMS pages which end normally without a /. However when linking from web banners e.c.t it always adds a / on the end. Will this have a negative impact on SEO?

Can't see the woods for the trees
Ok, I'm going be really cheeky here, so apologies in advance! We have this site www.simplychaise.co.uk and its not ranking anywhere in the top 50 for the term 'Chaise Longue' Moz has picked up a few issue with duplicate titles and a couple of 404's which I will fix shortly, It dosen't have any backlinks but I'm stumped as to why it isn't ranking higher than what it is, I'm not expecting 1st position but outside of the top 50 is something else. The site looks ok to me, but I think it might be a case of I've been looking at it so long that I can no longer see the wood for the trees. Could any kind hearted Mozer point me in the right direction here please, what am i missing? I'd greatly appreciate it, many thanks in advance for being so cheeky and well, useless! Jon

Is there some reputed company/person which can fix the SEO issues for me?
One of my websites http://forum32.com/ was ruling the roost shortly after it launched. We cover BTS (behind the scenes) etc of the TV shows that my production company makes. But then it all went downhill. I do understand that my readership fluctuates with the number of shows I am doing and therefore covering but for a show like "Qubool Hai" which has been running for the past 3 years and we do almost two posts about it - we rank nowhere. Could posting about this "too much" be a problem? Anyway I have been breaking my head over this for the past six months and spent a lot of time trying to set this right but: 1. I am running out of time as I am about to start directing another show. 2. I am not even sure if what I am doing is right! Can any person/company Which is well trusted help me out of this situation? How can I get a website to show up in local search in a major city when it is in the suburbs
We did a website for a local landscape company.they are in the outskirts of a major city of Dayton. Most people search landscape company Dayton area. I'm finding landscape companies coming up with lower moz trust and moz ranking. Some of them had no keywords or page titles.
