To include in Sitemap or not to include?

Hello all,
A bit of a confusing one but please bear with me...
On our website we have a Used Cars section where each morning a feed is loaded onto our site with any changes to the stock. Some cars may have been sold and removed, some new cars may be added, some prices may be changed, every day every morning this very large section of our website is updated.
The question I have is, should I be including these urls in my sitemap? The Used Cars section is a huge portion of our website content and is our most important area, the Used Cars overview is our most frequently visited page.
The reason I ask is because of course Google might crawl and see car X, but tomorrow car X could be gone and be replaced with car Y. Should I be even mentioning these pages to Google if by tomorrow some of those urls could be gone? It's always changing and it's something we don't have control of.

Essentially, yes we want to tell Google this page is there, but to not 'trick it' and then that page disappears just as Google finds it resulting in a 404.
We're going to get a sitemap generated each day as so much content changes on the site anyway, but No Indexing and 301'ing is something we'll then give a go.
I'll keep you posted on progress!

I would put the content in the sitemap, and once the cars are gone I would remove the items from the sitemap and put up 301 redirects to either the car category page or a similar page. The article below does a pretty good job explaining.

First of all, I would try to include it in sitemap. Than I'd do the following:
- For all the cars that you have sold, I'd try to implement a noindex, follow (and keep the page alive for the following few days, giving time to Google to crawl these URLs again).
- Every day a sitemap should be generated, then pinged (check Google's "best practices for sitemaps" article: http://googlewebmastercentral.blogspot.ro/2014/10/best-practices-for-xml-sitemaps-rssatom.html and the ping protocol: http://www.sitemaps.org/protocol.html#submit_ping)
That's my personal approach. But might be that others come up with better ideas.

Sitemap Query
I've decided to write my own sitemap because frankly, the automated ones pull all kinds of out of I don't know where. So to get around that, manual it is. But I have some products appear in various categories, should I still list every product in each category in the sitemap, regardless of some being duplicates, or should I choose the most relevant category and list them there? I do have a canonical URL extension which should resolve any duplicate content I have.

Should a keyword focussed front end (html) sitemap be made for all the dynamic URLs or 2. Sitemap generator which only includes canonical urls
Does anyone know of a 3rd party sitemap generator that will only include the canonical url's? Creating a sitemap with geo and sorting based parameters isn't the most ideal way to generate sitemaps. Please let me know if anyone has any ideas. Mind you we have hundreds of thousands of indexed url's and this can't be done with a simple text editor.

Invest in a Image Sitemap - Yes or No?
Hey Mozers, 2 part question I'm reaching out to see if you all think Image Sitemaps are totally worth it for a big company. I can totally understand its value for a smaller mom & pop company. With a larger company they would have way more products so is it worth it having an image site map? I cant find examples of image sitemaps online. Would you be able to provide a website that is doing it? I can only find video sitemaps.

Proper sitemap update frequency
I have 12 sitemaps submitted to Google. After about a week, Google is about 50% of the way through crawling each one. In the past week I've created many more pages. Should I wait until Google is 100% complete with my original sitemaps or can I just go ahead and refresh them? When I refresh the original files will have different URLs.

Subdomain Blog Sitemap link - Add it to regular domain?

blog.fancydomain.com Because of certain limitations, I'm told we can't put our blogs at the subdirectory level, so we are hosting our blogs at the subdomain level (blog.fancydomain.com). I've been asked to incorporate the blog's sitemap link on the regular domain, or even in the regular domain's sitemap. 1. Putting the a link to blog.fancydomain.com/sitemap_index.xml in the www.fancydomain.com/sitemap.xml -- isn't this against sitemap.org protocol? 2. Is there even a reason to do this? We do have a link to the blog's home page from the www.fancydomain.com navigation, and the blog is set up with its sitemap and link to the sitemap in the footer. 3. What about just including a text link "Blog Sitemap" (linking to blog.fancydomain.com/sitemap_index.html) in the footer of the www.fancydomain.com (adjacent to the text link "Sitemap" which already exists for the www.fancydomain.com's sitemap. Should i remove sitemap from the mainsite at a webshop (footer link) and only submit .XML in Webmaster tools?
Case: Webshop with over 2000 products. I want to make a logical sitemap for Google to follow. What is best practice at this field? Should i remove the on-page sitemap there is in html with links (is shown as a footer link called "sitemap") and only have the domain.com/sitemap.xml ? Links for great articles about making sitemaps are appreciated to. The system is Magento, if that changes anything.
