Removing Out of Stock Items from an E-Commerce website

I have a dilemma.
We have over 500 out of stock items that are still listed on our ecommerce website. I'm thinking it would be a good idea to leave them up because they are all considered content by google, and the keywords might drive traffic.
On the other hand, the customers might be disappointed if the items are out of stock (we don't restock our sold out items), and many times, they will not lead to a conversion if the customer is looking for something very specific.
Considering all these factors (and some unmentioned ones), my main question is: If I remove content, does that make all of the other content on our website stronger by having more pagerank and link juice flow to them, or do I hurt our rankings?

If you have more pages that all contain links to the same pages (e.g. category pages) then more link juice will be flowing to those category pages. I wouldn't just remove the content, at least 301 redirect the old products to a category page, or a newer version of that product if appropriate - include a message on the new page explaining that the product they searched for is out of stock, but we suggest this/these alternative(s), or something like that. If you don't want to 301 them, you could just have links on the out of stock pages to new item or category pages.

Should we reinstate the old website?
In a nut shell we had a great site that performed well and grew month on month but it perhaps looked a bit dated. A decision was taken to build a new site and the job given to a PR agency for some reason. All the titles, H1 tags, page content and url structure was changed and now the site has drop 50% of organic traffic. I've been tasked with trying to rebuild rankings but so far it's not going well. Rebuilding an old website
Since we have a strong website; meaning high traffic, but we got 2 issues 1. the framework of the design is not user friendly. 2. the current platform is really old; therefor it comes up with technical problems daily/ We are worried about our links which will affect in our new design, what would be wise to do? When is it safe to remove 301 redirects?
I have created over 500 301 redirects in my .htaccess file, some of them are more than 2 years old now. Should I delete them? I don't like seeing the "notices" number in crawl diagnostics so high 😞

Removing 301 Redirects
Is it safe to remove old 301 Redirects from an SEO standpoint and can 301s dramatically affect seo? Prior to switching our old domain over to our new domain, we had (and currently still do) tons of 301 redirects, because of optimizing our file names and structure. Then our old domain was redirected to our new domain in the same redirect file. So that being said, now that our new domain has been up and running for about 3 months, would it be safe for me to get rid of the old 301 redirects and redirect anything that was on our old domain to our new domains home page? This would clean up our redirects tremendously and I hope would help with SEO.
