No Redirects In Place After Transfer To New Site With Same Domain :(

I'm new here and am loving all the information! Can't wait to dig in more.
Folks, I have a situation and would love to hear more about your experiences here and what advice you all have to give.
I have a client whose SEO I helped out with about 4-5 years ago. It went well and they had historically been ranking on pages 1-2 for the majority of their targeted keywords.
Client and I lost touch over the years, but now we are in process of working together again. What I learned today is that my client redesigned the entire old site without placing any redirects and entirely creating new URL structures (I already hear the gasps of air of those reading this). Long story short - you guessed it - rankings/traffic has dropped and the old pages have fallen out of index. Considering that I was hired to re-do and re-audit the SEO of the site and also considering that the domain had a relative decent standing in the rankings in the past, I'm wondering what exactly I should do of the following options (or please do suggest other options):
1. We have the ability to completely revert back to the old site with all the old keywords and and search optimized URLs. The new site was launched just 2 weeks ago and the owner has said that he is willing to revert back to the old site while we audit the new site and get all of the proper optimizations in place. This would be a great option if it will help us because at least we can get a site up that we know ranked well with Google in the past.
2. 302 redirect the old URLs to the somewhat appropriate page on the new site while - in the meantime - I work on the new site structure and keywords/SEO optimizations. I say 302 because a 301 redirect from the old pages to the new pages may only do me so good because I would plan on changing the keywords/URL structures of the new site anyway. Once finished with the optimizations, I'd then 301 redirect to the new appropriate pages
3. 301 redirect everything from the old site to the somewhat appropriate page on the new site right away. Then, once I've completed all the appropriate optimizations, I'd need to re-301-redirect to the new pages I've created.
As you can see, I'm in a bit of a jam. But, considering that the new site was launched just about 2 weeks ago, maybe there's some hope here. Thanks fellow Mozzers! Hopefully that all makes sense.

Welcome to Moz, everyone has a different way of doing bits. I'll give you some pointers on what i might do in your position.
First off i'd set up a dev site version of one version of the site - new/old this would enable you to get a comparison of what urls/ content is missing. dont forget its not just urls that affect rankings if they've changed all their content too that will also have an affect. If you want the quick win a restoration may be the most beneficial. I wouldn't bother with 302 to be honest I'd rather put my time into getting it right
Most of the time it's down to how to get a client earning again (assuming it's taking business away) so the quick win here is, restore, set up dev site for new, prep a migration plan. Put into motion.
I'm sure lots of other Moz people will also give some great advice as I said this above is what I may do but as I'm sure you know there is always lots of ways to solve and there is also other subtleties to worry about etc.

New Adwords Account To Replace Old Low Account Quality Score
I'm dealing with an old adwords account that has been managed by a wide variety of people over many years. From what I can tell, the account has always struggled with low kw quality scores. In addition to other quality score improvements (SKAGs, better landing pages, more ad testing for CTR), what do you think of throwing in the towel on this account and starting a new adwords account... importing the better part of the old account? Is anyone aware of stats stating how many people abandon pages the deeper they get in a site?
For example, let's say someone enters via a landing page, and instead of having a form there is a button to a form. What percentage of people will click the button and fill out the form vs if the form was right there on the page? Basically, I am trying to figure out what percentage of users do websites lose for every click a user makes on the site.

Will hreflang indication help single language site?
I have read a few articles that say indicating a language per webpage with hreflang really only helps sites that use multiple languages. Although my site is only in English, I see that it is ranking for a few foreign language keywords in Google Search Console (not sure exact traffic but roughly 15% of visitors from Search are non English preferred). My thought is that indicating language will help my single-language site because it will weed out the non-english speakers who are probably bouncing from the site. Overall I am thinking it might improve the quality of my search traffic. Do you think my logic is sound, or is adding hreflang not beneficial to my site? All feedback welcomed. Thanks!

How complicated would it be to optimize our current site for the Safari browser?
Hi all! Okay, here's the scoop. 33% of our site visitors use Safari. 18% of our visitors are on either an iPad or iPhone. According to Google Analytics, our average page load time for visitors using Safari is 411% higher than our site average of 3.8 second. So yes, average page load time pages loading in Safari is over 20 seconds...totally unacceptable, especially considering the large percentage of traffic using it. While I understand that there are some parameters beyond our control, it is in our own best interest to try to optimize our site for Safari. We've got to do better than 20 seconds. As you might have guessed, it's also killing conversation rates on visits from that browser. While every other browser posted double-digit improvements in conversion rates over the last several months, the conversion rate for Safari visitors is down 36%...translating into 10's of thousands in lost revenue. Question for anyone out there gifted in Web design and particular Web Dev....Do you think that it's possible/reasonable to attempt to "fix" our current site, which sits on an ancient platform with ancient code, or is this just not realistic? Would a complete redesign/replatform be the more realistic (and financially sound) way to go? Any insights, experiences and recommendations would be greatly appreciated. Landing page on a separate domain?
I want to start a PPC campaign for an ecommerce site, but my ads are rejected due to my URL being offensive. The name works great from a branding perspective, but it has kept me from being listed in certain directories and advertisements. I thought about buying a separate domain to host the landing pages for the PPC campaign where the user would then be redirected to my product page for purchasing. Is this a good idea? Would you recommend another approach?

Should I add social media icons to homepage of ecommerce site?
... In particular Facebook likes for social proof and credibility? (We have 1.7k likes, more than most competitors). Aimed at the higher end of the market, I've tried to keep the aesthetic a bit more pared down. But, perhaps this needs to be made more prominent?

Why does Google only show the review stars for some listings in the Places results
I have a client who shows up in the Places results for his targeted keyword phrase, but one of his competitors' listing shows 5 gold stars next to the reviews which causes him to stand out visually. I was under the impression that at one time the stars only showed for listings that had official Google reviews, but the other listings in the results also have "Google Reviews" but no stars.
