Google Plus Business (How to replicate categories from Places)- Advanced

I'm very familiar with local promotion. However, I work in some fairly competitive local markets and in most cases only a few dominant keywords are necessary for the client to perform well.
With new clients who aren't grandfathered into the old places interface, I cannot setup custom categories. This is known to everyone, but what I would REALLY appreciate is if someone could explain how I can at least to some degree replicate that targeting?
To put it in perspective, for the standard categories (through Google Plus Business) my client rank very well; thus you can assume the client's local strength is solid; but when it comes to the few specific terms I need, I can't see to replicate the effect.
Please help... anyone!

Thank you for your feedback. I was not aware of item number one and I'll look into it. In the meantime I'm trying to get an understanding of the factors which can replicate the effect of "custom categories" for new clients who I don't have the old Google Places interface for and could really use the effect of custom categories.
As to your point on number three; I have done some testing and from what I can tell there is little or no value from the description field (probably because it would be too easy to spam).
I do see some competitors ranking with the new Google Plus Business accounts even against others that have categories so I think there has to be a way to do it... I just don't know how.

Mgordon is actually correct - Google's custom categories are on their way out and do not exist in the new Google+ Local dashboard. You might want to look into this further in case it will affect any of your clients.

Google is completely doing away with custom categories, and I have come across other threads with business owners expressing concern that their most important categories do not exist in the new pre-set category taxonomy. There are three thoughts I can share with you on this.
- I have heard talk that Google may be open to hearing requests for additional categories to be added. You might want to do some more searching around the Google forum in case there was a discussion of this I happened to miss. Google staffers do sometimes start threads to address concerns like these, but the custom categories are definitely going away, so they can't be part of your marketing strategy.
- Have you used Mike Blumenthal's category tool to check for synonyms that may trigger an appropriate new category for you? Here's the link:

- You can, of course, mention those lost categories in the business description field of the Google+ Local page, but it's my opinion that Google has devalued this area of the page to some extent and I don't know what effect, if any, it has on influencing rank at this point.
Sorry not to have a solution here. I do suggest searching around Google's forum for more discussions started by people finding themselves in your same situation with the new category system.

Sorry if I've got the wrong end of the stick (correct me if so) you want to set up some custom categories in Google local?
You can still do this here - <cite class="vurls">www.google.com/local/add/businessCenter</cite>
obviously the custom categories will change the way you rank in a local area so I'll leave it to you and research to find the best one's but it can be good for telling Google this local business does this e.g
bookshop that sells special books
categorizes in :
antique books
Google have changed the names up but Google local is now Google places etc.

How to Have Multiple Listings appear on Google maps
Hi my client has two locations for his restaurants: Me Gusta Tacos He wants to have both his locations show up in the map pack, which they currently do when you type in Restaurants, Dinner, food near me etc... However, when you google Me Gusta Tacos the Google listing shows up on the right for one of his locations, but there isn't a Map Pack for his two locations. How can I change my Google Business to be a non local business?
Hey guys, Do you know how to change my Google business account to be a non local business? I want my Google Knowledge Graph to be clean and neat like this. Does it mean that this company doesn't claim the business? Will removing the address from the Google My Business solve it (which I don't know whether we can take down the address)? Thanks

(Australian Business) Ranks 7th Brisbane, but ranks 3rd in Sydney and Melbourne. Why is Brisbane ranking worse, how to fix?
Years ago the rank would be the same across Australia. If we ranked 3rd in one city, it would be the same in every other city. How do you select a Google category for the SERPs?
Recently I was looking up law schools in Texas and came across a SERP listing I had never seen before. Google provided the category "law school" and narrowed it down by geographic location. I checked the code on both websites for schema and was unable to locate it. Furthermore, one GMB listing was claimed and another was not. I'm wondering why both Texas A&M School of Law and Houston College of Law showed up but University of Texas Law School did not. I have attached a screenshot of the SERP to see if anyone has seen this before or can provide any insight. Search term was "list of law schools in texas" but the same snippet showed up for "best law schools in texas." Thanks 8XHvZt4.png

Bing Places Listings for Real Estate Agents in the same office?
We've got a client that has a number of real estate agents that operate out of the same location. There are clear guidelines for how to approach this with Google My Business (https://support.google.com/business/answer/3038177?hl=en) but I'm having no luck finding resources as it relates to Bing Places and individual practitioners. Does anyone have experience with this within Bing? Essentially the client wants to maintain the office itself as a location, and there are agents that want to create/claim pages that would utilize the same address. Thanks

Changing Business Names
Hi All, I am working with a client that is changing its business name and website domain. Obviously, they want Google Maps to display their correct information. I know that in order for this to happen, they will need to do some citation clean-up and update their Google+ Local page, but does anyone have any opinions on the order in which these things should be done? Wrong Category Displaying Google Business Page?
Our firm keeps displaying "bankruptcy attorney" on google business page. Granted, we do that, as well as a variety of other services, but our primary category is "Personal Injury Attorney". I was told the categories are randomly selected, but I don't think that's true. Every time I've looked (or had other people look for us) on local, it displays as "bankruptcy attorney." What should I do? Is there a way to lock in the "Personal Injury Attorney" category, so it's the one that displays? Should I get rid of all the other categories except for "personal injury attorney?"
