Ecommerce product rankings tank when procuct out of stock

When checking our weekly ranking update this morning I noticed that several products where down 2-3 pages (or even dropped from the first 50) from last week. Looking through these products, they share one common trait: these pages are for products that are no longer available or are temporarily out of stock (and have been for the last few weeks).
I understand Google is looking at bounce rates, but do they also looks at our website (or Schema markup) to see if the product is in stock or not? We also use Google Shopping to they should have a pretty good understanding of our stock levels and the general availability of our products.
If it's just a question of bounce rates, we could switch to pre-orders for our products (we don't take any order for out-of-stock products at the moment) or we could offer the more expensive versions with a discount.
If Google is looking at inventory status, we could disable this to keep ranking high and increase our search presence. Any drawbacks on this?
Just getting back in the SEO-game after a focus on the business processes so I could use some help here. We seen great improvements where we've stepped up and created great product descriptions, but it is really disheartening seeing products get dropped so easily.

HDPHNS, it's quite possible that Google is doing that on purpose--that they see the product is out of stock so they don't rank it as high. Google wants to provide a good user experience, and it would be frustrating if someone went to Google, did a search, went to your site, and found that the product is out of stock.

Our company plans to quickly launch an e-commerce site to sell religion themed banners (religionbanners.com). We'll have our products up on the site in about a week. Should I block Google from accessing the site during this period? Product Colour Variation and Canonicals
Hi there, We are currently doing an SEO audit of an ecommerce website and we ar eunsure on the best practice in terms of using canonical link tag for some product variations. An example is that the company has a product with two colour variations: Black and Tan. These are for the same product and have 99% the same content. Within the content of the page the colour is the only thing that changes (along with the meta information and imagery of course). My question is should we choose one product and canonically link back to that one i.e. Black is the main product and we link Tan back to this via a canonical link? Many thanks in advance.

How much the Page Rank matters in SEO?
I have my own blog which is 6 Month old with Page Rank 1, and my fiends has a blog with page rank 2 which is 6 Months Old domain as my. I used to work hard on content and Link Building. Following every webmaster guideline spending 3 to 4 Hours on my blog, but my friends website is just crazy, 3 Website links to it with no PR, no Facebook, no twitter shares and nothing. I want to Know How my friend website has High PR than me, Does Page Rank Really matters in SEO or my friend is performing some black hat magic on his website. Best answer will be appreciated thanks

301 Redirect to mobile site effecting rankings
On my site I redirect users when on a mobile device to be redirected to my mobile version of my site. In the last couple weeks I added that redirect in my htaccess file. I just realized today that I am doing a 301 redirect. In the last few weeks my ranking have gotten lower. I am starting to think that because of the redirect my mobile site is not as optimized as my regular site and therefor is effecting my rankings. My question is how can I redirect my users to my mobile site but not use a 301 AND how do I get google to use my main site content for ranking on the mobile side. I want to go back to getting my search rankings on the mobile side using my main sites content. Can I simply remove the 301 on the redirect? Hope that makes sense.

How long would it take for On-Page Optimization to have an effect on Google Rankings?
Hi there, I have a page on our website with an Interview with the author Tess Gerritsen. There has been a reasonable amount of Social Media buzz related to the page and lots of links. According to SEOMoz we are an A grade for the keyword Tess Gerritsen, we currently rank 29th on Google.co.uk for a 'tess gerritsen' search. My question is - how long would it take for any new changes to have an effect? I presume the answer would be whenever the page is crawled again. But is it wise to change one thing, then get crawled and see what the effect is, then the next day change something else and see what the effect is. Or is it wise to change one thing and then leave it a week or so to see the full effect of the change? Apologies for the vague question, if you need any more clarification just let me know. Thanks.
