How keywords and subfolders connect

I'm working on restructuring my site. We have main topic areas, and any given visitor will ONLY be interested in 1 of those topics. So to consolidate the information into a simpler format, I want to take all the various pieces of content and wrap them under a given topic. [There is a question in here, I promise.]
So I want to create www.domain.com/topic/subtopic-1, /topic/subtopic-2, etc. [Yes, I will apply all necessary redirects for any new URL restructuring.]
Now here's the question: If I want to rank for "Peanut Butter Sandwiches with Jelly" and "Peanut Butter Sandwiches with Jam," will I be able to structure the URLs as /peanut-butter/sandwiches-with-jelly/, or should I go /peanut-butter/peanut-butter-sandwiches-with-jelly? And please note, /peanut-butter/ will likely redirect to /peanut-butter/subtopic-1/ since it won't make sense to have /peanut-butter/ on its own. [PB&J is just an example.]
What's the best way to go about this? Any recommendations? I really appreciate your help.

My experience with subtopics in URL structure is that they are over-rated. Use the main category to help the user know where they are in the site and potentially about the topic that the page might be about. If you want to drop keywords, do it in the category or in the slug for the name of the page. You can work it in there and it gives you more flexibility. This also helps with making your page be closer to the root folder vs ending up being too far down in a folder structure.
When I have used sub-categories you always end up with content that could be in two different ones and so then you have to decide which one is the better one, etc etc. You will end up having to rework your URLs later due to issues with your sub-categories. The only way I have seen subcats work well is when you have something like /state/city/zip or something else where your end item is only in one cat, subcat, etc.
I would not do the /peanut-butter/ to redirect to /peanut-butter/subtopic-1 - that makes no sense from an organizational perspective. If peanut butter is not a strong enough category by itself, it should not be a category to start with. You need to rethink what your category topics are. Ideally, /peanut-butter/ is a keyword combo you want to rank for and has great traffic potential that converts. It should be a hub page for your site for that topic.
Find good categories, work in the keyword into that category or if not work it into the slug for the name of the page. If you want a good example, look at how the Moz site is setup. Also, remember that keywords in the URL are good for SEO, but you really get more bang for the buck for a good title and content and links into that content. Dont overthink the URL.

Home page ranks for most keywords with no SEO
Hi Guys, The keyword I am trying to rank is on seperate page with its own Optimization in place. However the HOME page of website starts ranking for that keywords . The keyword is mentioned on Home page Just once in content description, that's all. What should be my ideal strategy. Deleting the Sub Page, will that improve the SEO of my home page and improve the Rank for that keyword ? Also I can see my Own YELP pages rank better than the actual website for few terms . Any way around this ? A Part from building links to page ?

Should we get a new domain that has our main keyword in it.
We have been running our site about 10 years under the domain www.islesurfboards.com and we are referred as "Isle Surfboards" when linked to in the anchor text. Our core product line and keyword focus has always been on "surfboards" and its related long tail keywords. However in the last several years we have began to sell "paddle boards" and now they have become our best selling product accouting for 80% of our business. We really want to rank well for "paddleboards" and related words but noticed we always seem to fall below people who have websites with "paddleboard" or "sup" in the domain and company name. will they always rank better unless we also inlcude it in ours? Should we move to a New Domain that focuses on the new target keyword "paddleboard" or a combo of both "surfboards" and "paddleboards"and would this make any difference or even hurt us since it would be a new domain. Then in addition rebrand our company name to include surfboards and/or paddleboards in the company name or some combo of both so the anchor text when people who refer to us relate to both paddle boards and surfboards?

URL - Keywords
My domain name contains my top two keywords. Am I penalized if I create another page where I add my domain key words a 2nd time after the domain name along with a subcategory and the name of a state. I don't know what white hat and black hat is so I want to make sure I stay white hat. Also I didn't know it but is it true that your title shows up in your domain name?

Should I build links to the home page or a url containing the keyword?
I run an IT company and the company name does not contain the key word I am trying to rank on. I also have a bunch of pages with page rank that containing the actual keywords, for example: http://www.mycompanyname.com/tech-support/locations/brighton My target keyword is "Tech Support Brighton" My Home page is PR4 and my location based pages are PR3. My plan was to build 3 or 4 location pages for the locations we provide tech support for and target location based keyword Anchor text to these URL's e.g "Tech Support Brighton" and then for the home page build links that have the anchor text "Tech Support".
