Usage of Schema.org Microdata?

I am trying to figure out the correct usage of Schema.org for a business.
Example:
There is information like opening times or payments accepted. Would you populate this data within meta tags on every page (i.e. in the header) or really target specific pages? This could also apply to general info such as address, contact details, etc..
Interested in hearing your thoughts

I figure brand in the case of a restraunt would be FoodEstablishment->LocalBusiness->Organization that sets your business branding across the site. Your would want to ensure any 404's that might happen go to the home or an informative search page, as a usability feature.

So when you say brand, you mean all the general details, i.e. contact info, address, etc. should be present on all pages? I do the event, food tagging etc.. which is all specific to the content actually being there, but for instance if I have the basic details in the header, that'll also show up in the 404, archive pages, etc. which in my opinion is probably fine?

I would and do target content on a range of our pages, where I think we can give the viewer more useful information. If you list a sample menu you could use the 'offers' to provide prices and specials. You can use your customer reviews with the 'review' tag. It is also good to establish your brand throughout with the 'organization' tags. I do think this is a longer term strategy as Google is only starting to make use of some of the tags now and does not have a working test tool yet.
So, overall answer is maybe target your brand on each page and pick specific pages with strong useful content that you begin taging, at least until a good test tool allows you to check results.

Scaling with schema markup
Right now, the only way I know to do schema markup is through hard coding the designated area where the information is located on the site. I'm thinking about developing an option in a WYSIWYG that allows for basic schema implementation to make it easier for multiple users of experience levels. Does anyone have any examples, tools, or tips for making schema scalable? I want to do a good job with this, but the site I am working on has thousands of pages and multiple "owners."

Schema markup for videos: Are video schema tags only for use on video hosted by a site or do they also apply to embedded videos hosted on YouTube?
We do not currently have a native video hosting solution for our site and instead embed videos that are hosted on YouTube. Can video schema markup be used for YouTube hosted video? Thank you.

Microdata and dinamic data.
Hi, everybody! We're starting up a local services website in Brazil. Something like redbeacon.com or thumbtack.com, but obviously different. So we are developing our 2.0 version of the site, and I want do put microdata in every provider's pages, to rank people's evaluation about this particular provider, and geographic information about him. Ok, we want to use microdata in several pages, but those are more important: the providers. These data (geo and rank) will be dynamically generated from our database. In Schema.org, I only found information about using static data to build microdata for my intentions. My doubt is: does google and bing and yahoo and etc index dynamic generated data? Is there something about sitemaps.xml or robots.txt that I can do to have my data indexed on search engines? Our front-end is the guy who deal with html and our codemaster uses pure php for coding. Hello... I have an ecomm clients who's competing against Amazon in the SERPs. Amazon does a great job of leveraging micro-data. Here's the rub... Amazon is ranking for product level pages and my client is ranking for category level pages. How can my client leverage micro-data to 'compete'?

Questions about Vittana.org's blogging contest and having bloggers use specific anchor text.
Hi All, Kenji Crosland here. I just joined vittana.org (yesterday!) to do some of the blogger outreach and content creation/link building. Although most of the links we've gotten in the past are branded links, we've decided to actively pursue anchor text links with specific keywords. If you check, you'll see that vittana has a relatively high domain authority. At the beginning of next week we'll be conducting a blogging contest with A-list celebrity tech bloggers. I don't think we'll have time to contact influencers in other areas for this contest unfortunately. When these A-list bloggers write their posts, we want them to have a link to this page: http://www.vittana.org/students To me, this seems a great opportunity to win on certain keywords we've discovered that should be easy to win and yet have a high volume of monthly searches. These are 5 word plus keywords that have over 300,000 searches per month. The students page, however, isn't optimized for those keywords. In the long run we want to win for the more difficult keyword "literacy". The word "literacy" is what we think will be a part of our new tagline: "Literacy is not enough". Because of time constraints, we won't be able to create landing pages to win for those "low hanging fruit" keywords in time for the blog contest. My question is: to what extent should we optimize the http://www.vittana.org/students page for the five word plus low hanging fruit keywords that we've discovered. I imagine if the content isn't relevant our clickthrough rates will suffer even if we do win for it (Altering our meta description is a possibility here) . Should we just try for the difficult keyword from the get go and come up with other ways to win for the low hanging fruit keywords? I'd love to hear your thoughts on this.
