REL prev/next on pages with additional sort parameters

We need a bit of advice on a site we are working on.
Currently, the site displays items in the categories in order of date and all of the pages of the category listing are rel prev/next tagged correctly.
This is great, and works really well - however we want to include some more sorting options (by popularity, name, file size... etc) into the mix.
What's the best way to go about this using the correct tags? Is it better to NOINDEX all of the sorting options and just leave the default by date listings indexed?
Also, we cannot canonical the sorted options to their counterparts because the page content would be different.
Any ideas? Any help is greatly appreciated.

Thanks for the reply Dana. No, a view-all page is not an option, some of the categories have over 11,000 items - so we can rule that out!
I've looked at all of the existing resources, and while all of them offer great advice, nothing touches on the subject of multiple sort options - they seem to be only for standard page 1, page 2... etc listings.
The link you provided to the YouMoz post we have read through thoroughly and they do it a little differently. In their example, they sort the items on the current page, while our sort options would change the order of the entire category, therefore we can't use canonical... as the page content is 100% different.
We want to work with multiple sort options and wanted to know the best way to do this.

Do you have a "View All" page option? If so, you could just use a canonical tag on the "view all" version of the page, without doing anything further.Here are some helpful resources (the video from Google is very good):

I'm debating on what the best category structure is for a recipe website and was looking to get some advice. It's a recipe/travel/health fitness blog but recipes reign on the site. Should it be: Option A website name\recipe\type of recipe\URL of specific recipe or Option B website name\type of recipe\url of specific recipe (and just cut out the 'recipe' category name) Any advise would be appreciated! After adding a ssl certificate to my site I encountered problems with duplicate pages and page titles
Hey everyone! After adding a ssl certificate to my site it seems that every page on my site has duplicated it's self. I think that is because it has combined the www.domainname.com and domainname.com. I would really hate to add a rel canonical to every page to solve this issue. I am sure there is another way but I am not sure how to do it. Has anyone else ran into this problem and if so how did you solve it? Thanks and any and all ideas are very appreciated.

Rel=Alternate on Paginated Pages
I've a question about setting up the rel=alternate & rel=canonical tags between desktop and a dedicated mobile site in specific regards to paginated pages. On the desktop and mobile site, all paginated pages have the rel=canonical set towards a single URL as per usual. On the desktop site though, should the rel=alternate be to the relevant paginated page on the mobile site (ie a different rel=alternate on every paginated page) or to a single URL just as it is vice versa. Why are new pages not being indexed, and old pages (now in robots.txt) remain in the index?
I currently have a site that was recently restructured, causing much of its content to be reposted, creating new URL's for each page. To avoid duplicates, all of the existing pages were added to the robots file. That said, it has now been over a week - I know Google has recrawled the site - and when I search for term X, it is stil the old page that is ranking, with the new one nowhere to be seen. I'm assuming it's a cached version, but why are so many of the old pages still appearing in the index? Furthermore, all "tags" pages (it's a Q&A site, like this one) were also added to the robots a few months ago, yet I think they are all still appearing in the index. Anyone got any ideas about why this is happening, and how I can get my new pages indexed?

Any advice for my website http://cvcsports.com?
I run the website http://cvcsports.com for myself and my parents. We offer custom varsity jackets for athletes/companies/etc. We rank first in Google for "letterman jackets" and near the top for "varsity jackets". I really want to reach #1 for "varsity jackets" (we were briefly #1 a few days ago but didn't stay there). Does anyone have any advice on what I can do to achieve that?
