How do I determine international search volume for a search term, beyond google?

I am trying to determine which countries I should be entering into next with my product based on search volume and competition. The issue is that not every country has google as their primary engine, ie. China.
How would I go about figuring out volume / competition globally across all engines?

Is 11k-30k search traffic too high for a small blog with low domain authority to compete for? Is competition all that matters?
Trying to decide on a keyword phrase for my next post. One of the two phrases I'm deciding between has 100x more traffic but the priority is wayyy higher and the competition is just one point higher (54 vs 53). I'm hesitant to write on a post that gets 11k-30k monthly volume however b/c it just seems like too much traffic for a small blog with a domain authority of only 18 to compete with. But if the competition is nearly the same and the priority is higher, should I go for it anyway? I generally go for things with lower traffic thinking I will be able to better compete. Thanks!

How do I find out what low-volume keywords are best to target?
Since many of our products and services are purpose-built for a niche community, I find that many of the keywords I am researching are all low-volume. Data on the Keyword Difficulty Tool show '0' under Bing Search Volume (exact match). I know what my competitors are targeting based on their title tags and web content, but I'm not sure if they did their keyword research homework, so I don't want to assume. Is there any other way to determine which keywords I should be targeting?

Google algo mistake in persian search?
I recently wanted to work on a high important persian keyword (شارژ ایرانسل) and analysis it on moz.com Difficulty SERP. Whilst researching keywords I often find the global monthly search on google adwords tool differs, yet the local (UK) is the same (or vice versa) Example: ready mix concrete - global 90,500 & local 18,100 ready mixed concrete - global 60,500 & local 18,100 or forklift truck hire - global 18,100 & local 4,400

forklift truck rental - global 22,200 & local 4,400 I'm making an assumption that for my local country, the phrases ready mix" and "ready mixed" are being treated the same, as are "hire" and "rental" but globally they are not. Am I correct? Of course, they could be two completely separate terms according to Google but coincidentally, have the same search volume. However, I find this happens quite regularly. Do the search engines kind of test you out at a higher ranking for a short period of time?
I ranked very well for my keywords. They are not competitive. Nonetheless, I got convertible traffic to my blog. Suddenly, I run a search for the keywords and there is this other website ranking higher than me. it seems to be a new website. No data on opensiteexplorer. So, the only thing that I can conclude and which I've been thinking that google does is to test new webpages out for a bit higher up on the rankings. If the bounces are lower than average, then I suspect that they will give you better rankings in the future. Is this somewhat how it works?
