301 Redirect Attribute-Based Dynamic URL to Renamed Attributes

I work with a number of ecommerce sites that have dynamically-created urls based off of product attributes we've assigned in our cms. I am updating a handful of these attributes to more seo-friendly terms because they are outdated but am not certain how to go about redirecting all the urls that each attribute is in/could be in.
For example: If I had the attributes hoagie and beanie and changed them to sandwich and headwear, a dynamic url might change like this:
- .com/hoagie/french-bread ---> .com/sandwich/french-bread
- .com/beanie/hoagie/novelty ----> .com/headwear/sandwich/novelty
Since the urls are dynamically created, I am not sure how I go about redirecting all of them, or if I need to redirect all of them at all (instead just redirecting the urls indexed by Google, etc.)
I also have a number of links within copy on each of the sites that contain linked anchor text using attributes that will be changing. I am assuming I will need to 301 each of these or update them manually to reflect the new attributes.
I am new to the seo field and would appreciate any and all advice or direction to guides and tutorials that could aid me with this project. Thanks!

Update all internal links to point to the new URLs. 301 redirects don't pass 100% of the link juice.
The best option is to create a 301 redirect rule(s) that handle all possible situations. If that's not practical, then just worry about the ones that are linked to by external websites. You can spot these by making the transition to the new URLs, then watching for 404 errors in Webmaster Tools, and looking for pages linked to by external sites.
If you're using IIS, you can actually do some pretty complex logic in your 404 handler and make it return a 301 in certain cases. Check this post I did a while back.

Sort parameters and overly dynamic URLs
Howdy mozzers I have a car dealership site with an inventory page that allows users to specify dealer location, model, make, year, etc. with drop-down menus. Each new choice changes the URL parameters and unspecified categories appear as "...&model=&year=..." I've attended to the URL parameters in Webmaster Tools, and according to Google's new URL parameters video, it looks like they've got a handle on navigating the site. That said, I do get warnings in my seomoz crawls that these URLs are overly dynamic (there are up to 12 parameters per URL). How concerned should I be? How would the Moz community suggest handling this many parameters in my URLs? Thanks as always

301 redirects and Dynamic URLs
I just ran my first diagnostic and one of my primary immediate problems are duplicate titles and duplicate content. My guess it that because the root URL http://sitename.com (which has not yet been redirected to www...) has generated an entire tree of content which is identical to the tree rooted at http://www.sitename.com. QUESTION: Do I need to do a redirect simply for the root url (sitename.com -> www.sitename.com) or do I now need to develop specific 301 redirects for each of the sub-nodes/pages? ie sitename.com/?q=about-us -> www.sitename.com/?q=about-us sitename.com/?q=our-team -> www.sitename.com/?q=our-team etc.

Is a redirect based on a session cookie hurting rankings?
My clients business is divided in chain stores. All stores are set under the same franchise. There is one domain www.company.com with branches like www.company.com/location1/content and www.company.com/location2/content etc. I've taken care of duplicate content issues with rel="canonical" and duplicate page titles are also not a concern, anymore. Right now the concept is like this: If you visit the site for the first time you get to choose between the locations. Then a cookie is set and once you revisit www.company.com it will redirect you via a php header command to the location stored in your cookie: www.company.com/location1/content. My question is if this might hurt rankings in some kind of way as these aren't permanent redirects with a 301 but rather individual ones, based on your cookie.
